Cottage Cheese & Pepper Bruschetta By Chef Ashish

Bruschetta , one of the favourite Italian appetizer, now a days there is lot of variation in bruschettas.
Here , I did it with cottage cheese ( Paneer) tempered with cumin , onion, tomatoes an d bell pepper. I was bit confused in the starting as may be my cottage cheese will become rubbery but i cooked it like a Paneer bhurjee and it gets the awesome result. Please see the recipe below
French Baguette 1
Cottage Cheese 350g
Red Capsicum 1
Yellow Capsicum 1
Garlic Cloves 3
Mint Leaves 20g
Green Chilli 2
Olive Oil 50ml
Mint Sprigs for garnish
Garam Masala 5g
Salt to taste
Red Chilli Powder 3 to 4 g
take the french baguette , cut into a slant slices and rub with garlic and olive oil.
Take a pan, make it hot, add the bread on to the pan and toast it nicely from both sides and keep aside.
Now, wash your vegetables and start to chop onion, pepper, garlic, chillies.
Just cut into small dice of cottage cheese.
Take a pan , make it hot and add bit of olive oil, add onion, saute a bit, add garlic, cook together.
Add tomatoes, green chilli, peppers and saute all together .
Add red chilli powder, turmeric powder, salt, Garam Masala and cook the mixture well. Add shredded mint leaves and cook a little.
Add cottage Cheese and mix slowly.Cook a bit and keep aside .
Now put the mixture on to the toasted bread and arrange it on the plate .
