Proudly Featuring Chef Christian Buenrostro , Executive Chef Four Seasons, Abu Dhabi and his easy and delicious recipe of Prawn Ceviche .

Well, Chef Christian is cooking from more than 15 years and Masters in cooking. Chef Christian Born in a family where both his parents work in Hospitality. So its not a surprise for him and for the parents that he ended up in the same industry. Chef Christian adds that he always got the inspiration and encouragement to become a chef from his parents and grandmother and he always give credit to all of them.

Chef Christian born in Mexico and grew up in a Spanish family and live in many places like Costa Rica , Venezuela, Argentina. Though he said "he is from mexico but he is not a mexican chef" ,he jokes. His pocket is full of international experiences and worked in famous hotels like Four Seasons Hotel , Kuwait, Four Seasons Bahrain Bay, Rotana Group of Hotels, Grand Hyatt, Westin , Four Seasons, Mexico. Chef Christian is a passionate Chef who always being front of house with guests , Delivering a truly personalised Experience.

Chef Christian Adds that it doesn't matter you work in the hotels or restaurants as his experience says that working in a standalone restaurant provided me with invaluable experience and helped me to develop an eye for detail across all areas of the kitchen operation from end to end .

What is Ceviche -Ceviche, also cebiche, seviche, or sebiche, is a Latin American seafood dish that may have originated in Peru, typically made from fresh raw fish cured in fresh citrus juices, most commonly lemon or lime, and spiced with ají, chilli peppers or other seasonings including chopped onions, salt, and coriander Traditional ceviche recipes consists of raw seafood tossed with an acidic marinade (think: citrus juice or vinegar) that “cooks” the fish. In this Prawn ceviche recipe, Chef Christian used cooked prawns and marinate it with lime ,orange juice, chopped coriander, chilli for some heat. He Adds avocado to make the dish bit creamy

Cooked Prawns 200g

Chopped Onion 30g

Diced Cucumber 30g

Diced Tomato 30g

Chopped Coriander 20g

Lime Juice 30ml

Orange Juice 50ml

Tomato Ketchup 30g

Chopped Jalapenos 10g

Avocado 30g

Salt To Taste

Served with - Tortilla Chips

Method -

  1. Clean and give quick blanch the prawns in a vegetable stock with a touch of lime juice and salt.

  2. Cool down the prawns in an ice water and reserve.

  3. In a glass bowl , add the lime juice, orange juice, ketchup, salt, chopped jalapenos chilli and mix to combine the flavours.

  4. Add the rest of the ingredients, mix and rectify seasoning if needed.

  5. Serve and enjoy with your favourite Corn Tortilla chips .

  6. Enjoy the dish
