CAPRESE TART BY CHEF ASHISH
A famous Italian appetizer but with a twist of adding tart which gives crunchiness to the appetizer
Savory Tart 1 pc
Cheery Tomato 5 to 6 pcs
Fresh basil 5 to 6 leaves
Straciatella Cheese 50g
Basil pesto 1 tspn
Balsamic Reduction 1 tspn
fresh basil leaves 2 cup
garlic 2 cloves
pine nuts 1/4 cup
extra-virgin olive oil 2/3 cup
Kosher salt and freshly ground black pepper, to taste
1/2 cup freshly grated Parmesan cheese
Slice the tomatoes, Take a tart and apply basil pesto .
Add, Straciatella cheese, Arrange cherry tomato and basil .
Add again a layer of straciatella and then 3 pcs of cherry tomato .
Put basil leaves on top, Take a plate drizzle some basil pesto and balsamic and place the tart , Finish it with olive oil.
For Basil Pesto
Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Add 1/2 cup of the oil and process until fully incorporated and smooth.Add Cheese . Season with salt and pepper.
