Chilla is basically a protein rich nutritious pancake made from gram flour and here one talented chef gives it a nice twist with Chia seeds and quino......So Who is this chef ????

Well , featuring in front of you a joyful, cheerful , talented Head Chef Sarthak who is currently heading the team of HILTON GARDEN INN , Ras Al Khaimah, UAE. He worked under some famous chefs in India and Uae and always brings out best from him. He adds on to this dish " one of his favourite dish as it is very light , gluten free as it is made up of chickpea flour. The chilla os the perfect breakfast food for busy mornings and for kids loves it, as it is only the preperation of about 10 to 15 min.

Chef Sarthak, started his career from Le Meridien , New delhi and he adds on that yes initial days were tough in the industry but one should can tackle those times with positivity, strong determination and confidence. His message for the budding chef :

So lets see his recipe but before that he will explain us some of the key ingredients in his dish .


Chia seeds are the tiny black seeds from the Salvia hispanica plant, a member of the mint family which comes from Central and South America. Chia seeds are relatively high in protein – so are a useful source of plant protein and provide a range of amino acids, particularly for vegetarian and vegan diets.


Quinoa acts like a wholegrain, but it is actually a seed from a weed-like plant called goose foot, which is closely related to beets and spinach. With twice the protein content of rice or barley,quinoa is also a very good source of calcium, magnesium and manganese. It also contributes useful levels of several B vitamins, vitamin E and dietary fibre. Cooked quinoa seeds become fluffy and creamy, yet maintains a slight crunch.


Gluten is a protein found in Wheat, Barley and Rye. All flours made from these grains contain Gluten.

So Lets Check Out his recipe for Chilla


For Chilla -

Gram flour 100gm

Chopped onion 20gm

Chopped coriander 5gm

Red chilli powder 1tsp

Garam masala 1/2 tsp

Salt To taste

Carom seeds 1tbsp

Chia seeds 1tbsp

Water As required

Direction :

Mix all the ingredients above and prepare semi thick batter. In a non stick pan spread ladleful batter and cook it from both sides.


Quinoa :-

Water 2cup

Quinoa 1cup


- Wash quinoa under running water, boil it for 10-13 minutes and it’s ready to serve. ( make sure you use same proportion of water and grain to get best results) .


Filling :-

Olive Oil 10ml

Garlic - 2 cloves (sliced )

Onion - 1 sliced

Bellpepper 20 gm

Chilli flakes a pinch

Salt a pinch

Cooked Quinoa 1tbsp

Direction :-

- Heat a pan , put sliced garlic , onion and cook until golden brown. Add bell-pepper , salt , chilli flakes and cooked Quinoa. - Toss well and stuffing is ready.


Put the chilla on a plate, put one spoonful filling and half fold the chilla , make it hot in a pan from both the sides.
