We Know Green Thai Chicken Curry, We know Green Thai vegetable curry but Thai Green Sabutdana Khichdi ,,,, sounds quite different right . But yes its Thai Green Sabutdana Khichdi . Well , yes Its quite innovative creativity by Chef Bhanu Singharia . so lets check with him about his culinary journey and his dish a bit more .



Chef Bhanu Singharia , is one of the talented chef I know from many years, during his college times he won several medals in culinary challenges, tarted his career with Le Meridien , new Delhi ...trained under master chefs , chef bhanu continue his journey towards his goals, worked with jumeirah in (United Arab emirates )and some fine dining restaurants and fill his pocket with experiences of different cuisines and places. He worked with Massive restaurants and got trained with modern Indian food. So lets check with him about his innovative dish .



WHAT IS SABUTDANA ?


Sabutdana is basically a starch that is extracted from tapioca roots, which is then turn into spherical pearls that may vary in size. It is made by pressing the starch through a sieve under pressure and then dried .














WHAT IS GREEN THAI CURRY PASTE ?


This is something really hot, its a paste basically use to make green Thai curry. Its is made up of Thai green chillies, Galangal, lemon grass, onion,coriander, garlic ,cumin.


Basically Sabutdana khichdi is very old preparation but here Chef Bhanu gives this dish a twist by adding Green Thai Curry paste, So lets check his recipe for the same .





INGREDIENTS QUANTITY


Thai Green Paste 20g

Green chillies 2 no.

Cilantro 30g

Lemon 1 no.

Peanuts 2 tbsp

Salt Totaste

Sugar To Taste

Oil 1Tbsp

Cumin Seed 1/2 tsp

Curry Leaves 5 frozen

Sabutdana ( Tapioca ) 1/2 cup


METHOD -

1. Collect all the ingredients

2. Soak the Sabut Daana. Meanwhile heat the oil in the pan, crackle the cumin

and curry leaves,


3. Take your Green Thai curry Paste put it in pan and dilute it with the help of little water.


4. Strain the tapioca add it in a pan, mix it well , do the seasoning and add green chillies to it.


5. Squeeze the lemon as per the tanginess.

6. Garnish it with chopped coriander and fried peanuts .
